Why prep rails run warm
A prep table can have a cold cabinet and warm pans at the same time. The rail depends on the lid being closed when it's not in use, the right pan depth, clean condenser coils, and a fan moving cold air up to the pans. We check all of it, not just the thermostat.

Common questions
How often should reach-in condenser coils be cleaned?
In a working kitchen, every one to three months. Units near fryers and griddles collect grease faster and need it more often. A clogged coil is the most common cause of a warm reach-in.
Is it worth repairing an older reach-in?
Often yes. Fans, controls, gaskets and even compressors are replaceable. If the cabinet is rusted through or the repair is close to the price of a new unit, we'll tell you straight.
My prep table pans are warm but the cabinet is cold. Why?
Usually the lid is left open, the pans are too deep for the rail, the condenser coil is dirty, or the fan that moves air to the rail has failed. We diagnose which one.
